Ingredients

  • One 15-ounce can Garbanzo Beans (aka Chickpeas), drained and rinsed
  • 1 1/2 cups Chocolate Chips, melted
  • 3/4 cup granulated Sugar
  • 4 Eggland's Best eggs, large
  • 1/2 teaspoon Baking Powder

Preparation

  1. Preheat the oven to 350ºF.
  2. Place the beans, melted chips, sugar, eggs and baking powder in the bowl of a food processor and process until super smooth.
  3. Pour the batter into a 9-inch springform pan and bake 40 minutes, or until the cake is set and a toothpick inserted in the center comes out clean.
  4. Cool completely in the pan on a rack. Remove from the pan, slice and serve.

Notes and Suggestions

If you're following a gluten-free diet, make sure the chips you use in this recipe are "gluten free." You can top with fresh berries and whipped cream (or frozen yogurt or vanilla lowfat ice cream). If you don't have a food processor, use a blender. To melt the chocolate chips, place them in a medium saucepan over low heat and stir until melted, 1 to 2 minutes.
