Ingredients

  • 1 1/4 cups all purpose flour
  • 1/4 cup sugar
  • 2 teaspoon baking powder
  • 1 tsp baking soda
  • 1/4 teaspoon salt
  • 1 Eggland's Best Egg (large)
  • 1 1/4 cup buttermilk or milk
  • 1/4 cup oil

Preparation

Preheat a griddle or skillet on medium heat.

In a large bowl whisk together flour, sugar, baking powder, baking soda and salt.

In a medium bowl whisk together egg, milk and oil.

Pour wet ingredients into dry ingredients and whisk together until just combined. Do not over mix.

Divide pancake batter into three bowls.

Use food coloring to color batter purple, green and orange.

Pour 1/4 cup batter per pancake onto hot ungreased griddle or skillet and cook until bubbles form on top; about 1-2 minutes.

Flip and cook for an additional 1-2 minutes or until cooked through.

Continue following cooking steps until all the batter is cooked.

Stack pancakes in threes with one of each color, pour over syrup and top with candy eyes!
