Ingredients

  • 1/3 cup Butter
  • 2/3 cup Sugar
  • 2 large Eggland's Best eggs
  • 1 cup Bananas (1 large or 2 small bananas)
  • 1/4 cup Buttermilk
  • 1 1/4 cups All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 cup 100% Bran Cereal Post
  • 3/4 cup Dried Apricots
  • 1/2 cup Chopped Walnuts

Preparation

In a mixing bowl, cream butter and sugar.

Add eggs; mix well.

Combine bananas and buttermilk.

Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with banana mixture.

Stir in bran, apricots and nuts.

Pour into a greased 9-in. x 5-in. x 3-in. loaf pan.

Bake at 350 degrees for 55-60 minutes or until bread tests done. Cool 10 minutes before removing from pan to a wire rack.

my hubby loves apricots! I am going to give this a shot! I wonder if a glaze/drizzle on top would hurt any???
