Guiltless Egg Salad
A delicious, lightened up recipe with fat free Greek yogurt!

- 2 Eggland's Best eggs, hard cooked
- 1/4 cup fat free plain Greek yogurt
- 1 tablespoon fresh parsley, chopped
- 4 black olives, pitted and chopped
- Pinch of black pepper
- 1 tablespoon honey
Hard cook eggs; cool and peel.
Mash eggs and yogurt together with a fork or pastry blender; add in olives, parsley and pepper and blend well.
Drizzle with honey and serve on your favorite whole-grain crackers or whole-wheat toast.
