Kickin' Egg Salad
Delicious EB eggs get a little kick with sriracha in this great recipe. Double or triple this recipe and serve with crackers at your next party for a unique dish!

10 mins Yield: 2 servings
- 2 Eggland's Best eggs, hard cooked
- 1/4 cup plain Greek yogurt, fat-free
- 1 tablespoon fresh cilantro, chopped
- 1-2 teaspoons sriracha sauce
- 3-4 olives, diced
- 1 dash pepper
Hard cook eggs; cool and peel.
Mash eggs and Greek yogurt together with a large fork or pastry blender.
Add cilantro, sriracha, olives and pepper; mix well.
Serve with your favorite crackers or on bread as a sandwich.
Notes and Suggestions
To save prep time, use Eggland's Best Hard-Cooked and Peeled eggs.
