A great choice to start your morning, try these egg tacos with your favorite vegetables!

- 6 Eggland's Best eggs
- 1/2 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup green or red peppers, diced
- 1/2 cup salsa
- 4 8-inch flour tortillas
- Salt and Pepper, to taste
Scramble eggs in medium size skillet over medium heat, cooking for 4-5 minutes or until eggs are almost set. Add salt & pepper to taste.
When eggs are almost set, fold in shredded cheese.
Remove eggs from heat and fill each tortilla with eggs. Add chopped peppers and salsa.
Try this recipe using corn or whole wheat tortillas. You can also add your own variety of veggies!
