Preparation
- Preheat the oven to 350°F. Coat a 9” square baking pan with 1 tbsp of olive oil.
- In a mixing bowl, whisk together the cocoa, baking soda, salt, the remaining 2 tablespoons olive oil, and the boiling water.
- Mix in the sugar or sugar substitute, “Eggland’s Best Eggs”, and vanilla.
- Fold in the flour until just combined with the wet ingredients. Add some of the nuts to the batter.
- Spread the batter in the prepared pan and sprinkle with remaining walnuts and chocolate over the batter.
- Bake for 30 minutes, or until a toothpick inserted in the center comes out clean. Cool completely on a wire rack. Cut into 16 squares.
