A little twist on basic egg salad. A delicious, low-fat recipe for great sandwiches or over lettuce for a tasty salad!

Ingredients

  • 4 Eggland's Best Hard-Cooked Eggs
  • 1/4 cup Celery, chopped
  • 1/4 cup Green Pepper, chopped
  • 1/4 cup Onion, chopped
  • 1/4 cup Mayonnaise, imitation, no cholesterol
  • 1 tablespoon Plain Low-fat Yogurt
  • 1/2 tablespoon Dijon Mustard
  • 2 teaspoons Cider Vinegar
  • 1/4 teaspoon Salt
  • 1/8 teaspoon White Pepper
Vegetarian Low Fat Ready in 10 mins, recipe by Eggland's Best

Preparation

  • Chop the Eggland's Best eggs
  • Add the rest of the ingredients and mix well
  • Divide into equal portions and serve in a sandwich or as a salad on lettuce

    How many points for Weight Watchers?

    It would be 4 points excluding the bread. If you use the Sara Lee 45 Delicious it would add an additional 1 point or serve on a bed of lettuce for no additional points.

    Probably cut down the fat and cholesterol by eliminating some of the egg yolks.
