Salmon-Stuffed Eggs

Not your average deviled eggs. Stuffed with elegant salmon and garnished with fresh dill, these little devils are superb for those times when you really want to impress your guests.

Ingredients

  • 12 Eggland's Best Hard-Cooked eggs
  • 1 can (6 oz.) Salmon, drained & flaked
  • 1/2 cup Light Mayonnaise
  • 1 tablespoon fresh Dill, finely chopped
  • 1/8 teaspoon black pepper

Preparation

  • Cut the eggs in half lengthwise and remove the yolks to a medium bowl; set aside the egg whites.
  • Add the salmon, mayonnaise, dill, and pepper to the yolks; mix until well combined.
  • Spoon or pipe the mixture back into the egg whites. 
  • Serve, or cover and chill until ready to serve.

Notes and Suggestions

Make them fancy!  Simply fill a resealable plastic storage bag with the egg yolk filling.  Snip off a corner of the bag.  Pipe the filling directly into the egg whites.

Top with additional chopped dill or chopped pimento for garnish.

    every time we make hard cooked eggs we have avery hard timr taking the shell off and have others people that have the same problem.What are we doing wrong?

    Great question. Hard-cooked eggs may be difficult to peel if they are very fresh. A hard-cooked egg will peel more easily if it has been stored for one or two weeks before it is cooked. After boiling, crackle the shell all over by tapping gently then hold under running water to make peeling easier. Eggs may also be harder to peel if they are not cooked long enough. For perfect hard cooked eggs, bring eggs to room temperature then place the eggs in room temperature water; bring to a boil then turn down to a low boil for 12 minutes.
