Ingredients

  • 2 Eggland's Best eggs, large
  • 1/4 cup nonfat yogurt, plain
  • 2 cups skim milk
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup brown sugar
  • 3 cups stale bread, cubed
  • 1/3 cup raisins

Preparation

  1. Beat eggs. Blend in yogurt and milk.
  2. Add vanilla, cinnamon, nutmeg and sugar.
  3. Place cubed bread in a 2 qt microwave-safe baking dish. Pour egg mixture over cubes.
  4. Stir in raisins.
  5. Weight cubes down to thoroughly moisten by placing a small plate on top. Weight the plate down with something heavy e.g. a can of vegetables.
  6. When mixture is thoroughly moistened, remove plate and weight.
  7. Microwave on medium power for 17 minutes or until the pudding has set up.
