Spray a microwave-safe mug or ramekin lightly with non-stick cooking spray.
Crack egg into cup; add salt and pepper and lightly scramble.
Microwave uncovered on high for approximately 45 seconds, or until egg begins to rise.
Remove from microwave, stir and add cheese; return mug to microwave and cook for an additional 30-45 seconds, or until egg is set.
Remove and sit for approximately 1 minute to cool down. Serve and enjoy!
Microwave settings vary, so add or remove 10 seconds cooking time depending on your microwave.
