Everything Bagel Breakfast Casserole

Ingredients
4 leftover everything bagels, cut into bite-size pieces
10 breakfast sausages, cut into bite-size pieces
4 Eggland's Best eggs, extra-large
1 cup whole milk
3/4 cup freshly grated cheddar cheese
1/2 cup finely shredded mozzarella cheese
1/2 teaspoon ground mustard
1/4 teaspoon salt
Pinch of black pepper
4 ounces block cream cheese, cut into bite-size pieces
1 tomato, diced, optional for garnish
1 avocado, diced, optional for garnish
Preparation
- Preheat the oven to 375°F.
- Lightly coat an 8x8-inch or similar size casserole dish with baking spray.
- Scatter the bagel pieces into the bottom of the dish.
- Scatter the sausage and cream cheese over the top of the bagels.
- In a bowl, combine the eggs, milk, cheese, mustard, salt, and pepper. Pour evenly over the bagel mixture.
- Bake in the oven for 40-45 minutes, or until the center is set and edges are golden brown.
- Remove from the oven and add tomato and avocado.
- Let it cool for 10 minutes, then slice, and serve.
