Ingredients

2 Large Eggland’s Best eggs

1/3 cup unsweetened apple sauce

1/3 cup honey

1 cup whole wheat flour

1 cup all-purpose flour

1 Tbsp baking powder

1 tsp salt

2/3 cup whole milk

1/2 cup fresh or frozen blueberries

1/2 cup fresh or frozen raspberries

2 ripe bananas, mashed

Mini muffin pan

Preparation

  1. Preheat oven to 400 degrees. In a large mixing bowl mix together mashed bananas, unsweetened applesauce, and honey. Lightly beat the Eggland’s Best eggs and add to the banana mixture.
  1. Mix together the flour, baking powder, and salt. Add the flour mixture to the mixing bowl a little at a time, alternating with a little bit of the milk.
  2. Rinse the frozen blueberries and raspberries and pat dry with a paper towel. Add to the bowl and gently fold to combine.
  3. Using a mini muffin pan, fill the muffin cups 2/3 full with the batter. Bake for 8-10 minutes or until the muffin tops are golden and a toothpick inserted into the center comes out clean.
