Ingredients

  • 2 Eggland's Best eggs
  • 1 cup sugar
  • 1 cup matzoh meal
  • 3/4 cup vegetable oil
  • 1 cup shredded coconut
  • 1/2 cup walnuts, chopped
  • 1 jar raspberry jam

Preparation

  1. Preheat oven to 375 degrees F; line an 8 x 8 baking dish with parchment paper and set aside.
  2. Stir together sugar, matzoh meal, oil, and eggs until thoroughly combined; fold in shredded coconut and chopped walnuts.
  3. Spread half of the mixture into the prepared baking dish; spoon raspberry jam evenly over matzoh mixture.
  4. Repeat spreading matzoh mixture over raspberry jam and patting down evenly.
  5. Bake for 30-35 minutes; cool completely before serving.
