Brownies are a family favorite and these brownies are good enough for your family because they have the added nutrition from Eggland's Best eggs. They are rich, chocolaty, and fudgy with a crispy top. They are also in muffin form, which are so simple and easy to make from scratch.

Ingredients

2 Eggland's Best eggs, large

1 Eggland's Best egg, egg yolk only

3/4 cup all-purpose flour (you can use gluten-free flour)

1/4 cup cocoa powder

1/2 cup semisweet chocolate chips plus 1/2 cup to mix in

1/3 cup coconut oil

3/4 cup sugar (can substitute with 1/2 cup monk fruits)

1 tsp vanilla extract

1 tsp baking soda

pinch of salt

Preparation

  1. Preheat the oven to 375°F. Grease your muffin pan with cooking spray or line with cupcake liners.
  2. In a large bowl sift the flour, cacao powder and baking soda. Set aside.
  3. In a microwave-safe bowl, melt chocolate chips and coconut oil for 30 seconds intervals until smooth.
  4. In another bowl, combine sugar, eggs and egg yolk, vanilla, salt and mix well until the mixture is combined.
  5. Add the chocolate mixture to the egg mixture and mix well. Add in the flour mixture and mix until just combined. Mix in the extra 1/2 cup chocolate chips (if you are adding them).
  6. Spoon the batter evenly into each cup or liners. Bake muffins at 375°F for 12-15 mins. Don’t over bake
  7. Let the brownie muffins cool, then remove from the pan and enjoy.
