This revisited eggnog is a bit healthier than the traditional eggnog because it's made with almond milk, vanilla pudding, and whipped egg whites. Make the eggnog by itself or in a cocktail!

Ingredients

Homemade Eggnog:

5 c. almond milk

1 package vanilla instant pudding

1/2 c. granulated sugar

2 tsp vanilla

1/2 tsp nutmeg

1/4 tsp allspice

1/4 tsp ground ginger

1/4 tsp salt

3/4 c. Eggland's Best 100% Egg Whites

1.5 tbsp sugar

Bourbon Eggnog Cocktail For Two:
1/2 cup homemade eggnog
3 oz bourbon
1 oz pimento dram
Garnish with graham cracker rim & whipped cream

Preparation

Eggnog:

  1. Add almond milk, pudding mix, sugar, vanilla, spices, and salt to a blender and blend on high until smooth. Set in fridge to chill for 15 minutes.
  2. In the bowl of a stand mixer fitted with the whisk attachment, whisk egg whites to soft peaks. Gradually add 1.5 tbsp sugar and beat until stiffer peaks form.
  3. Whisk egg whites into the chilled mixture.
  4. Enjoy by itself or in a cocktail.

Bourbon Eggnog Cocktail:

  1. Dip the rim of the two glasses in a saucer of water, then roll into graham cracker mixture, set aside.
  2. In a shaker with ice add eggnog, bourbon, and pimento dram. Shake for 1 minute.
  3. Pour mixture into glasses.
  4. Top with whipped cream and a sprinkle of nutmeg.
