Kale and Eggs
Kale is a very nutritious vegetable, high in Vitamins A and C, and lutein! It's a perfect match with a nutritious, delicious Eggland's Best egg.

Preparation
Clean kale and remove thick stem; cut kale into 2" squares
Spray a large pan with cooking spray and heat over medium-high heat.
Add kale to pan and cook, stirring occasionally, for approximately 4-5 minutes.
While kale is cooking, spray a small pan with cooking spray and heat over medium-low heat.
Crack egg into pan and cover with lid; cook for approximately 3 minutes, or until whites are set.
Serve egg over kale, and season with salt and pepper to taste.
