Red Velvet Cake is a Valentine's Day dessert staple, and these cake bites are perfect bite-size treats. Moist red velvet cake is mixed with vanilla frosting to make a cake pop batter. They are filled into smooth white chocolate shells and then dipped and drizzled with dark chocolate to balance the sweetness. Add sprinkles, sugar, or edible glitter to add festive Valentine's Day colors!

Ingredients

1 box red velvet cake mix

1 1/4 c water

1/2 c + 1 tbsp vegetable oil

1 box chocolate instant pudding mix

4 Eggland's Best eggs, large

1 container of vanilla frosting

2 pkg white melting chocolate

1 pkg dark melting chocolate

Valentine's Day sprinkles, glitter or sugar

Preparation

  1. Preheat oven to 350°F.
  2. In a large bowl, combine the cake mix, pudding mix, water, oil and eggs. Spread into a greased 13 x 9 baking dish and bake according to the package directions.
  3. Meanwhile, melt white chocolate in the microwave in 30-second intervals until completely melted.
  4. Pour a spoonful of chocolate into each heart cavity of the chocolate mold. Spread the chocolate up the sides of the mold so it covers the entire heart. Repeat with each heart cavity.
  5. Place in the fridge for 10 min to set.
  6. When the cake is done, set it aside to cool completely.
  7. In a large bowl, mix the cake and container of frosting until it's completely combined. Place a half scoop of cake mixture into each heart cavity. It should fill the mold 3/4 of the way full.
  8. Cover each heart with additional white chocolate and smooth with an offset spatula. Once each heart has been filled and covered in chocolate, place it in the fridge to set for an additional 15 minutes.
  9. Carefully press each heart from the heart cavity and set them on a tray.
  10. Melt dark chocolate in 30-second intervals until smooth. Drizzle onto hearts, dip them into the chocolate or leave plain. Add extra decorative sprinkles or sugar to the chocolate covered cake bites.

Recipe Notes: The shells can be made ahead of time, and you will need a mini heart chocolate mold
