This combines a favorite Muffaletta sandwich and a popular breakfast/brunch egg dish into something special. It's a favorite because it combines the heartiness of a sandwich with the satisfaction of a baked egg dish. This Strata is good served any time of the year. It is quick to prepare and it can be combined the night before and baked before serving the next day. I love Eggland's Best eggs because they have cleaner taste and vivid color, making a difference in any way they are cooked.

Ingredients

Oil or melted butter

6 Eggland’s Best eggs, large

1-1/2 cup milk

1/2 cup Half & Half

1/3 cup chopped Capicola

1/3 cup chopped Salami

1/3 cup chopped Mortadella

3/4 cup shredded Smoked Provolone, divided

8 ounces Arugula, chopped

1-1/2 cups cubed and dried Italian bread

1 teaspoon Cajun seasoning

1 tablespoon dried Parsley

1/3 cup Panko breadcrumbs

1/3 cup cooked and crumbled bacon

Salt and Pepper to taste

1 cup pitted and chopped olives, assorted

1/4 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon minced garlic

1/2 teaspoon black pepper

16 ounces giardiniera

Preparation

  1. Preheat oven to 350°F and move rack to the middle.
  2. Liberally grease or butter a 1-1/2 quart baking dish. Set aside.
  3. In a large mixing bowl whisk together Eggland’s Best eggs, milk, half and half.
  4. Fold in the Capicola, Salami, Mortadella, 1/2 shredded cheese, arugula and breadcrumbs.
  5. Season with Cajun seasoning, salt, and pepper. (Recipe ingredients are salty so use minimal salt). Pour into prepared pan.
  6. In a small bowl, combine parsley, breadcrumbs, remaining cheese, and bacon. Salt and pepper to taste and sprinkle over Strata. Cover with foil.
  7. Bake for 35 minutes then remove foil. Place back in oven. Check-in 10 minutes. Strata should be puffy but set in the middle and golden brown around edges.
  8. Remove from oven and let set for 10-15 minutes before slicing. Serve with olive salad and giardiniera.

Olive Salad:

  1. Mix: chopped olives, olive oil, red wine vinegar and garlic. This can be prepared while Strata is baking.
