This cake was modified from a family coffee cake recipe and first made with pears from the local farmers' market in Kansas.

Ingredients

  • 5 - 6 pears
  • 1/2 cup butter, room temperature
  • 3/4 cup sugar
  • 3 Eggland’s Best eggs (large)
  • 1 teaspoon almond extract
  • 1 3/4 cup all purpose flour
  • 1 dash salt
  • 1 1/2 teaspoon baking powder
  • 1/8 teaspoon nutmeg
  • 1/2 cup milk

Preparation

Line the bottom of a large springform pan with parchment paper. Grease the paper and sides of the pan.

Peel core and slice the pears in 1/8 thick slices.

Place half the pears in a layer on the bottom of the springform pan, set aside.

Preheat oven to 350 degrees F.

Sift the flour, salt, nutmeg and baking powder together in one bowl.

In another large bowl, whip the butter for 3 minutes.

Add the sugar and blend for several more minutes untill mixed well.

Add eggs, one at a time until just mixed.

Blend in the dry flour mix and the milk, alternating the two.

Fold in the almond extract.

Pour over the layer of pear slices.

Add the last half of the pears on top of the cake.

Bake for about 55 minutes or until a toothpick inserted in the cake comes out clean.
