Protein Pancake & Fresh Berry Kabobs

These are delicious protein pancakes made with Eggland‘s Best eggs paired alongside with local fresh berries and a delicious Greek yogurt fruit dip.

1 cup Protein Pancake Mix

2 Eggland’s Best eggs, large

1/2 cup unsweetened Almond milk

1 pint fresh blueberries

1 lb fresh strawberries

6 oz fresh raspberries

1 cup Greek yogurt (honey vanilla or another flavor)

1 package sugar-free/fat-free cheesecake pudding mix


  1. Add protein pancake mix, almond milk and eggs to a medium bowl. Use a fork to mix well.
  2. In a pan on medium heat, pour 2-inch circles of pancake mix in the pan. Cook until the tops start to bubble. Flip with a spatula and cook for 1 to 2 minutes until browned and cooked through.
  3. To make the yogurt dip add the Greek yogurt and pudding mix together with a whisk. If needed add a splash of almond milk and continue mixing until all lumps are gone. Optional use a blender.
  4. Create the kebabs by alternating fresh fruit and pancakes. Dip and enjoy!

Recipe Notes: can easily be made dairy-free with alternative milk substitutes, gluten-free with using gluten-free pancake mix, etc.
