Red, White, and Blue Gluten Free Fruit Pizza for your next holiday celebration!

Ingredients

Cookie:

1 Eggland's Best Large egg

2 cups gluten free flour

1 tsp baking powder

1 cup sugar

1/4 tsp salt

3/4 c butter

2 tsp vanilla

Frosting:

6 tbsp butter or shortening

3/4 cup powdered sugar

8 oz cream cheese

1 tsp vanilla

strawberries and blueberries for topping

Preparation

  1. Preheat oven to 350F
  2. Mix dry ingredients for the cookies in one bowl, and wet ingredients in another
  3. Combine wet and dry ingredients until dough forms (note: you might need to add a little extra liquid like a tsp of water or milk to get the dough from crumbling)
  4. Spread dough onto a cookie pan and use a rolling pin to smooth out the dough into a pizza shape
  5. Bake for 20-25 minutes
  6. For frosting, use shortening or butter at room temp. Combine remaining ingredients until a fluffy, smooth consistency is achieved
  7. Allow the cookie to cool, then spread on frosting and add your favorite red and blue fruits!
  8. Slice and enjoy!
