Summer Berry (microwave) Baked Oats

A Light and Fluffy rendition of your favorite classic baked oats, but make it summer friendly

1/2 banana

1 tsp sweetener of choice

1 tsp baking powder

1/3 c oat flour

3 tbsp milk

2 tbsp Eggland's Best 100% Egg Whites

Dash Cinnamon

Pinch salt

Frozen berries

Yogurt Icing (optional):

1/3 c greek yogurt

2 tsp sweetener of choice


  1. Blend all ingredients together.
  2. Microwave for a total of 1:30, stopping every 30 seconds or bake 375°F for 25-30 min.
  3. Top with yogurt icing (whip yogurt and sweetener together) and some more berries!
