Need some fuel for a busy morning? This recipe is the perfect way to pack some protein and nutrients in to the start of your day! The combination of the sun dried tomatoes and feta will have you pumped to eat a healthy meal in the morning.

2 Eggland's Best Large Eggs

1 handful spinach, chopped

1 tortilla or wrap

1 serving feta (regular or tomato basil)

1 tbsp sun dried tomatoes, chopped

salt/pepper to taste


  1. Heat pan on stove
  2. Spray pan
  3. Add handful of chopped spinach to pan and let cook
  4. Stir up two eggs to add to pan
  5. Swirl pan to spread eggs out into a thin later
  6. Place tortilla on eggs right away (while they are still wet)
  7. Once eggs are cooked, flip tortilla over
  8. Add feta and sun dried tomatoes to eggs
  9. Roll or fold tortilla
  10. Can be made night before but tortilla will not be crispy.
