Egg sizes matter – sometimes.
When using EB eggs to scramble, poach, hard-cook, fry, or to use in an omelet, using any egg is OK and won’t alter the result of your recipe. Same as if you were adding them as a component of a dish like a salad or on top of fresh pasta or a burger.
When using them in a quiche or frittata, using medium vs. jumbo would have a small effect on the volume of the dish.
For baking recipes like cakes, pies, cookies, etc., recipes are calculated on using large eggs. Using a different size egg may alter the outcome of the recipe.
