Ingredients

  • 3 Eggland’s Best Eggs (large)
  • 2 ripe avocados
  • ¾ cup coconut sugar
  • 1 tablespoon pure maple syrup
  • 2 teaspoons pure vanilla extract
  • ¼ teaspoon salt
  • 6 oz dark chocolate
  • ½ cup cacao powder
  • ½ cup whole-wheat flour
  • 1 pint fresh raspberries

Preparation

  1. Preheat the oven to 350 degrees F, line an 8 x 8 inch pan with parchment paper and set aside.
  2. Combine the avocados, coconut sugar, maple syrup and vanilla and salt by using a food processor, hand mixer or stand mixer and place in medium-large mixing bowl.
  3. Place all of the dark chocolate except for a small handful (set aside to sprinkle on top of baked brownies) in a microwave-safe bowl and microwave in thirty-second intervals, stirring each time, until smooth and melted through.
  4. Combine the melted chocolate to the mixing bowl and mix until completely blended.
  5. Add the eggs and continue to mix adding in the cacao powder, flour, raspberries, and continue to mix until everything is mixed together smoothly.
  6. Spread the brownie mixture into the pan and bake for 30 minutes or until set.
  7. Remove from oven, let cool and then sprinkle remaining chopped dark chocolate on top.
