- 1 bag (medium size), egg noodles
- 7 Eggland's Best eggs, large
- 1 3/4 cup milk
- 1 cup cottage cheese
- 1 cup sour cream
- 1/2 cup sugar
- 1 cup raisins or dried cranberries
- 1/2 cup brown sugar
- 1/2 cup walnuts or pecans
- 1 teaspoon cinnamon
Preheat oven to 350 degrees; spray 9 X 13 or 10 X 14 casserole dish with nonstick spray and set aside.
Cook noodles according to package directions; drain and set aside when finished.
While noodles are cooking, beat eggs in large bowl; add milk, cheese, sour cream, sugar, and fruit and mix until well blended. Pour over noodles and stir.
Blend brown sugar, nuts, and cinnamon together in a small bowl.
Pour egg and noodle mixture into prepared baking dish, and sprinkle brown sugar, nuts, and cinnamon on top.
Bake for one hour or until center is firm and not wet. Cool slightly and serve.
