Tangy feta cheese is delicious in this classic Greek omelet.

Ingredients

  • 6 Eggland's Best eggs, scrambled
  • 1/2 cup diced white onion
  • 3 cloves garlic, minced
  • 1/2 cup chopped red and yellow peppers
  • 1/2 cup crumbled feta cheese

Preparation

In a large skillet, heat olive oil over medium heat; saute onions, peppers and garlic until onions are translucent and peppers are soft.

Add eggs and mix to incorporate vegetables; cook until eggs are firm.

Sprinkle with feta cheese and serve.
