Pancake Cakesicles
Make pancakes extra special by making them as “cakesicles.”

Ingredients
2 cups all-purpose flour
3 Tablespoons sugar
1½ teaspoon baking powder
1 teaspoon salt
½ teaspoon baking soda
2½ cups buttermilk*
2 Eggland’s Best Large Eggs, beaten
3 Tablespoons salted butter, melted and allowed to cool
1 teaspoon vanilla extract
Optional: White chocolate chips or almond bark, and sprinkles for decorating
*To make your own buttermilk, place 2½ Tablespoons of white vinegar or lemon juice in a 2½-cup (20oz) vessel. Then fill the remaining space with whole or 2% milk. Allow to sit for at least 5 minutes.
Preparation
- In a large bowl, mix together the flour, sugar, baking powder, salt, and baking soda.
- In a separate bowl, mix together the buttermilk, Eggland’s Best eggs, butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Prepare a silicone cakesicle mold by inserting wooden popsicle sticks through the designated slot at the base of each cavity.
- Fill each cavity with 2 Tablespoons of batter.
- Bake at 350-degrees for approximately 15 minutes, until the pancakes pull away from the sides of the cavity. The pancakes will be light-colored. (Tip: place the cakesicle mold on a baking sheet before placing in the oven; doing so will make it easier to remove the mold when hot).
- Serve as-is, or decorate with melted white chocolate or almond bark, and sprinkles.
