Ingredients
2 Eggland’s Best eggs, large
2 cups low-fat cottage cheese
1/2 cup vanilla protein powder
Cooking spray
1 cup berries (blueberries, raspberries, blackberries, or sliced strawberries)
4 teaspoons maple syrup
Preparation
- Preheat oven to 350 degrees F.
- In a blender or food processor, blend eggs, cottage cheese, and protein powder until smooth.
- Mist four (8 ounce) ramekins with cooking spray and evenly pour in the cottage cheese mixture.
- Bake for 30 minutes, until top is set. Let them cool at room temperature for 1 hour and then refrigerate for at least one hour to chill.
