Air Fryer Mashed Potato Bites

Give your Thanksgiving leftovers new life with these delicious Air Fryer Mashed Potato Bites!
Ingredients
Preparation
- Add 2 Eggland's Best eggs to a shallow bowl and whisk, fill another shallow bowl with panko breadcrumbs
- Using cold mashed potatoes, use a cookie scoop or tablespoon to form balls with the mashed potatoes, using 2 TBSP of mashed potatoes for each
- Coat each mashed potato ball in the egg wash then coat in panko breadcrumbs
- Add to a plate and refrigerate for at least 30 minutes, up to overnight
- Spray mashed potato bites and air fryer basket with cooking spray
- Air fry mashed potato bites at 375 degrees for 5-7 minutes, until golden brown
