Amaretto White Cookies
Amaretto cookies are delicious treats that typically feature the rich and distinctive flavor of amaretto, an almond-flavored liqueur. This gives the cookies a delightful nutty taste with a hint of sweetness.
Ingredients
½ cup Eggland’s Best Egg Whites
½ cup organic cane sugar (or caster superfine sugar if you have it)
1 tsp. pure almond extract or rum extract
2 1/3 cups almond flour
1/4 cup gluten-free flour
Powdered sugar, for dusting
Almonds, optional for center cookie placement
Preparation
- Preheat your oven at 350 degrees or on a cookie setting if you have it.
- Using a mixer with the whisk attachment, beat the egg whites until they are white and foamy for about 1-2 minutes.
- Add sugar while beating, then add the extract. Switch your whisk attachment to the regular paddle.
- On the low setting, add flour. Switch to using your hands if you have a hard time.
- Roll each cookie into balls. Dip each cookie ball into powdered sugar and place them on a baking sheet lined with parchment paper. Flatten each cookie gently with your fingers or the back of a spoon and place an almond in center.
- Bake until light golden brown, 15-20 minutes. Enjoy!
