3 Eggland’s Best eggs, large

1 cup heavy cream

1 ½ cups butternut squash, peeled and cubed

2 tbsp olive oil

½ tsp salt

¼ tsp black pepper

1 tsp fresh thyme leaves (plus extra for garnish)

½ cup grated Parmesan cheese, plus 2 tbsp for topping

¼ cup breadcrumbs

  1. Preheat oven to 400°F. Lightly grease a 9x9-inch baking dish (or similar).
