Bring the flavors of fall to your table with this cozy, veggie-packed gratin. Layers of roasted butternut squash, Brussels sprouts, and caramelized onions are baked in a light, creamy Eggland’s Best egg custard, then topped with golden Parmesan and crispy breadcrumbs. It’s an elegant yet simple side dish that celebrates autumn’s best ingredients — perfect for holiday gatherings or weeknight dinners.
Ingredients
3 Eggland’s Best eggs, large
1 cup heavy cream
1 ½ cups butternut squash, peeled and cubed
2 cups Brussels sprouts, trimmed and halved
1 small yellow onion, thinly sliced
2 tbsp olive oil
½ tsp salt
¼ tsp black pepper
1 tsp fresh thyme leaves (plus extra for garnish)
½ cup grated Parmesan cheese, plus 2 tbsp for topping
¼ cup breadcrumbs
Preparation
- Preheat oven to 400°F. Lightly grease a 9x9-inch baking dish (or similar).
- Roast the vegetables: Toss the butternut squash, Brussels sprouts, and onion with olive oil, salt, pepper, and thyme. Spread evenly on a baking sheet and roast for 20 minutes, until tender and caramelized.
- Make the custard: In a medium bowl, whisk together Eggland’s Best eggs, heavy cream, and ½ cup Parmesan until smooth.
- Assemble the gratin: Transfer the roasted vegetables to the prepared baking dish. Pour the egg mixture evenly over the top. Sprinkle with the remaining Parmesan and breadcrumbs.
- Bake: Reduce oven temperature to 375°F and bake for 20–25 minutes, or until the custard is set and the top is golden brown.
- Serve: Let rest for a few minutes, then garnish with fresh thyme or an extra sprinkle of Parmesan. Serve warm and enjoy!
Pro tip: Add a handful of baby spinach or roasted mushrooms for an extra layer of flavor — or serve alongside roasted chicken or turkey for a complete fall-inspired meal.
