Avocado Deviled Eggs

Ingredients
6 Eggland's Best Hard-Cooked Peeled Eggs
1 Ripe Avocado
1 Tsp Lime Juice
Salt + pepper to taste
Optional: paprika, everything bagel seasoning, or chopped herbs for topping
Preparation
- Slice the 6 Hard-Cooked Peeled Eggs lengthwise (from top to bottom) and carefully scoop out the yellow egg yolks. Place the egg whites on a serving platter and transfer the yolks to a separate, medium-sized mixing bowl.
- Add the avocado, lime juice, salt and pepper to the bowl with the egg yolks.
- Use a fork to thoroughly mash the egg yolks and avocado until the mixture is completely smooth and creamy. Season with salt and pepper to taste, mixing to ensure they are evenly distributed.
- Transfer the avocado-yolk mixture to a piping bag (with a decorative tip, if desired) or simply use a small spoon. Pipe or spoon the mixture evenly back into the hollows of the egg white halves on the serving platter.
- Dust the deviled eggs with your optional topping of choice, such as paprika, everything bagel seasoning, or chopped herbs. Serve immediately.
