Avocado Toast Eggs Benedict
Start your day with this energizing avocado toast recipe that perfectly combines health and indulgence. Our signature Eggland's Best egg, prepared Benedict style and drizzled with hollandaise sauce, transforms this classic avocado toast into a gourmet breakfast experience.
Ingredients
1 slice of Sourdough bread
2 Eggland's Best eggs, large
2 Eggland's Best yolks
1 ripe avocado
2 slices of tomato
2 tbsp lemon juice
1/4 tsp vinegar
1/4 tsp Himalayan pink salt
1/8 tsp of chili powder
1/8 tsp of black pepper
1/4 cup of unsalted butter, melted
Preparation
Make hollandaise sauce
- Melt butter on stove over low heat, being careful not to brown it.
- While the butter melts, crack and separate four egg yolks into a bowl. Whisk together thoroughly.
- Gradually incorporate the lemon juice while continuing to whisk. Season with Himalayan salt, black pepper and chili powder, whisking continuously.
- Once the butter has completely melted, remove from heat and slowly pour into the egg yolk mixture while whisking vigorously. Set aside.
Prepare Toast
- Slice sourdough bread, toast lightly. Grab tomato and cut two slices. Cut open an avocado and slightly mash.
- Crack two whole eggs into a bowl. Bring a pot of water to boil then lower heat to simmer. Add in 1/4 tsp of vinegar. Tip egg into the center of water. Let it cook for 3-5 minutes (your preference on how hard you’d like the yolk)
- Grab toasted bread slice, spread avocado mash on top, add sliced tomato, then poached eggs. Drizzle hollandaise sauce on top. Enjoy!
