This simple, wholesome dish pairs creamy avocado with protein-packed Eggland’s Best eggs, baked to perfection. Just crack an egg into each avocado half and bake until set. Ingredients

1 ripe avocado

2 Eggland's Best eggs, large

2 strips of bacon, cooked and crumbled

salt and pepper to taste

Preparation

  1. Preheat oven to 425 degrees F.
  2. Cut your avocado in half and remove the pit.
  3. Scoop out a small amount of each half so the egg will fit in the hole.
  4. Crack your eggs into each hole & sprinkle with salt and pepper.
  5. Put on a baking sheet and bake for about 15-20 minutes until cooked thoroughly or put on broil for just a few minutes until cooked.
  6. Once cooked, top with your crumbled bacon and dig in!
