Baked Egg in an Avocado
This simple, wholesome dish pairs creamy avocado with protein-packed Eggland’s Best eggs, baked to perfection. Just crack an egg into each avocado half and bake until set. Ingredients
1 ripe avocado
2 Eggland's Best eggs, large
2 strips of bacon, cooked and crumbled
salt and pepper to taste
Preparation
- Preheat oven to 425 degrees F.
- Cut your avocado in half and remove the pit.
- Scoop out a small amount of each half so the egg will fit in the hole.
- Crack your eggs into each hole & sprinkle with salt and pepper.
- Put on a baking sheet and bake for about 15-20 minutes until cooked thoroughly or put on broil for just a few minutes until cooked.
- Once cooked, top with your crumbled bacon and dig in!
