Baked Eggs Napoleon

Fun for the whole family, this comforting and tasty breakfast treat combines the nutrition and nourishment of Eggland’s Best Eggs with the whimsical, childhood reminiscence of an all-time favorite, tater tots!
Ingredients
1 clove Garlic
1 tbsp Jalapeno
1/4 cup Sweet onion
12 Tater tots, cooked and crumbled
Salt & Black pepper
1
tsp Butter
Preparation
- Preheat oven to 350 degrees and warm skillet over medium high heat.
- Melt butter in skillet, stir in onion and jalapeno and cook for 3 minutes until soft.
- Stir in garlic and cook for 1 more minute.
- Spray two small ramekins with non-stick spray and divide crumbled tots between them.
- Stir in and press the onion, pepper and garlic mixture into the ramekins.
- Top each ramekin mixture with a Large Eggland’s Best egg and season with salt and pepper.
- Bake at 350 degrees in the oven on the middle rack for 5 minutes.
- Then broil on high for 5-6 minutes or until the eggs are firm.
- Rest for 5 minutes before serving in the ramekin or use a utensil to extract the finished product for plating.
