Ingredients
4 Eggland's Best Cage-Free Large Eggs, plus 1 additional egg for the pastry wash
1 sheet of premium puff pastry, divided into 4 equal squares
1 cup of freshly grated cheese of your choice
¼ cup of fresh chives, finely chopped
Sea salt and freshly ground black pepper to taste
Preparation
- Begin by lining a baking sheet with parchment paper for easy cleanup.
- Create four cheese nests on the prepared tray, using ¼ cup of grated cheese for each. Shape them into circular wells, leaving adequate space between each nest to contain the egg.
- Carefully crack an egg into each cheese nest's center. Using a fork, gently break the yolk and lightly scramble within the nest. Sprinkle with freshly chopped chives, sea salt, and black pepper.
- Gently place a puff pastry square over each prepared egg mixture, pressing the edges firmly against the parchment to create a secure seal.
- Whisk the remaining egg and brush it evenly over the puff pastry tops. Bake in a preheated 425°F oven for 15 minutes until golden brown.
