A delicious banana bread flavored baked oatmeal for the perfect breakfast!

Ingredients

2 cups old-fashioned oats

1 Tbsp chia seeds

2 Tbsp ground flaxseed

1 Tsp cinnamon

1/2 cup Eggland's Best 100% Liquid Egg Whites

1 Tsp vanilla extract

1 1/4 cups soy milk

2 Tbsp brown sugar

3/4 cup mashed banana

1/3 cup chopped pecans

1 sliced banana to top

Preparation

  1. Preheat the oven to 375 degrees. Spray a medium baking dish with nonstick spray. Mix together all of the ingredients in a bowl (except for the pecans) and pour into the baking dish.
  2. Bake for 15 minutes. Remove from the oven and top with the chopped pecans and bake for 5-10 minutes longer until oatmeal bake is fully cooked. Top with banana slices if desired.
