Ingredients

2 cups all-purpose flour

1/2 cup chocolate or vanilla protein powder

3/4 cup unsweetened cocoa powder

1 3/4 cups coconut sugar

2 teaspoons baking powder

1 1/2 teaspoons baking soda

1 teaspoon salt

2 Eggland's Best eggs, large

1/2 cup oil (avocado oil or melted coconut oil work well)

1 cup buttermilk

1 teaspoon vanilla extract

3/4–1 cup hot brewed Pero

(Optional) 1–2 ripe bananas, mashed

(Optional) 1/2 cup chocolate chips

Option: Sliced fresh strawberries

Preparation

  1. Preheat oven to 350°F (175°C) and grease or line a 9x13 inch pan or two 8-inch round cake pans.
  2. In a large mixing bowl, whisk together the flour, protein powder, cocoa powder, coconut sugar, baking powder, baking soda, and salt until evenly combined.In a large mixing bowl, whisk together the flour, protein powder, cocoa powder, coconut sugar, baking powder, baking soda, and salt until evenly combined.
  3. In a separate bowl, whisk together the eggs, oil, buttermilk, and vanilla extract until smooth.
  4. If using bananas, mash them well and stir them into the wet ingredients.
  5. Slowly pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  6. Gradually add the hot brewed Pero and gently stir until the batter becomes smooth and slightly thin.
  7. If using chocolate chips, fold them into the batter.
  8. Pour the batter evenly into the prepared pan.
  9. Bake for 28–35 minutes, or until a toothpick inserted in the center comes out mostly clean.
  10. Allow the cake to cool for 10–15 minutes before slicing or frosting.
  11. Optional: Garnish with fresh sliced strawberries.
