Better-For-You (Protein) Chocolate Cake
A rich, moist chocolate cake with a nourishing twist, made using coconut sugar and protein powder. It delivers deep, indulgent chocolate flavor while keeping things naturally sweetened and a bit more balanced. Perfect for when you’re craving a feel-good dessert that doesn’t sacrifice taste.
Ingredients
2 cups all-purpose flour
1/2 cup chocolate or vanilla protein powder
3/4 cup unsweetened cocoa powder
1 3/4 cups coconut sugar
2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 Eggland's Best eggs, large
1/2 cup oil (avocado oil or melted coconut oil work well)
1 cup buttermilk
1 teaspoon vanilla extract
3/4–1 cup hot brewed Pero
(Optional) 1–2 ripe bananas, mashed
(Optional) 1/2 cup chocolate chips
Option: Sliced fresh strawberries
Preparation
- Preheat oven to 350°F (175°C) and grease or line a 9x13 inch pan or two 8-inch round cake pans.

- In a separate bowl, whisk together the eggs, oil, buttermilk, and vanilla extract until smooth.
- If using bananas, mash them well and stir them into the wet ingredients.
- Slowly pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Gradually add the hot brewed Pero and gently stir until the batter becomes smooth and slightly thin.
- If using chocolate chips, fold them into the batter.
- Pour the batter evenly into the prepared pan.
- Bake for 28–35 minutes, or until a toothpick inserted in the center comes out mostly clean.
- Allow the cake to cool for 10–15 minutes before slicing or frosting.
- Optional: Garnish with fresh sliced strawberries.
