Bread Pudding in the Microwave!

Bread pudding in the microwave and so few dishes to wash? Perfection!
Ingredients
- 2 Eggland's Best eggs, large
- 1/4 cup nonfat yogurt, plain
- 2 cups skim milk
- 1 teaspoon vanilla extract
- 3/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup brown sugar
- 3 cups stale bread, cubed
- 1/3 cup raisins
Preparation
- Beat eggs. Blend in yogurt and milk.
- Add vanilla, cinnamon, nutmeg and sugar.
- Place cubed bread in a 2 qt microwave-safe baking dish. Pour egg mixture over cubes.
- Stir in raisins.
- Weight cubes down to thoroughly moisten by placing a small plate on top. Weight the plate down with something heavy e.g. a can of vegetables.
- When mixture is thoroughly moistened, remove plate and weight.
- Microwave on medium power for 17 minutes or until the pudding has set up.
