Brie & Prosciutto Mini Frittata Bites

These mini frittatas take less than 15 minutes to make, and are perfect for busy mornings!

Ingredients

4 Eggland's Best eggs, large

1/8 cup heavy cream

1/8 cup Brie cubes

2 pcs Prosciutto

salt and pepper to taste

Preparation

  1. Preheat the oven to 400°F.
  2. Crack 4 Eggland's Best eggs into a bowl & beat them with heavy cream. Season with salt and pepper.
  3. Pour about 1/8 c egg mixture into a well-greased mini muffin pan. Place a few Brie cubes in each well and bake at 400°F for 5 min.
  4. Add small pieces or rosettes or prosciutto and bake for 3 more minutes.
  5. Garnish with herbs if desired.
