Brownies with Strawberry "Carrots"

These whimsical brownies are perfect for spring gatherings, Easter dessert tables, or a fun baking day with the kids. These brownies are as delightful to look at as they are to eat. Each bite combines decadent chocolate with a pop of fruity sweetness, making them a guaranteed crowd-pleaser!

Ingredients

1 Cup Medjool dates, pitted (about 10 - 12 dates)

1/2 Cup unsweetened cashew butter

1/2 Cup unsweetened cocoa powder

1/2 tsp baking soda

1/4 tsp sea salt

2 Eggland's Best eggs, large

1 tsp vanilla extract

1/4 Cup almond milk

Chocolate Ganache

1/2 Cup chocolate chips

1/4 Cup canned coconut milk

Chocolate Covered Strawberries

6 medium strawberries

1/2 Cup white chocolate chips (for coating)

Natural orange food coloring

Preparation

  1. Preheat oven to 350°F. Grease an 8x8-inch baking pan lined with parchment paper.
  2. In a food processor, blend pitted dates with cashew butter until smooth. If the mixture is too thick, add a little milk to help it blend.
  3. In a mixing bowl, combine the cocoa powder, baking soda, and salt.
  4. In another bowl, whisk together the eggs, vanilla extract, and the date-peanut butter mixture.
  5. Transfer the wet ingredients into the dry ingredients and mix until just combined. Add in the milk.
  6. Pour batter into the prepared baking pan and spread it evenly. Bake for 20-25 minutes.
  7. In a small pan, heat the coconut milk over medium heat until warm (but not boiling). Remove from heat and add the chocolate chips, stirring until smooth and melted. Allow it to cool slightly.
  8. Using the double boiler method, melt the white chocolate chips, stirring until smooth. Add dye-free orange food coloring and mix. Dip each strawberry into the melted chocolate, coating it well. Place on a parchment-lined tray to cool.
  9. Spread the chocolate ganache over the top of brownies, smoothing it out evenly.
  10. Place the chocolate-covered "carrot" strawberries on top of the ganache.
