2 Eggland’s Best Eggs, Large

1 medium head of cauliflower, grated or chopped into small florets

1 tablespoon olive oil (or your preferred cooking oil)

1/4 cup finely chopped onion

1/4 cup diced sweet pepper (optional, adds extra depth)

1 teaspoon garlic powder

1/2 teaspoon smoked paprika (or regular paprika)

Salt and black pepper, to taste

Fresh herbs for garnish (parsley or chives)
