Ingredients

For the Sheet Pan Eggs

8 Large Eggland’s Best eggs

8 Eggland’s Best egg whites

1/2 cup 1% milk

1/2 cup cheddar cheese, grated

1 tsp salt

1/4 tsp pepper

1/2 cup diced bell peppers

1 cup chopped spinach

6 slices cooked bacon, crumbled

12 slices Canadian bacon, diced

For Assembly

12 English muffins

Optional: cheese slices, extra bacon, hot sauce, etc.

Preparation

  1. Preheat oven to 400°F and lightly grease a sheet pan with cooking spray.
  2. In a large bowl, whisk the whole eggs and egg whites until well combined.
  3. Add milk, salt, pepper, vegetables, cheese, bacon, and Canadian bacon. Stir to combine.
  4. Pour mixture into the greased sheet pan and spread evenly.
  5. Bake for 15–20 minutes, or until eggs are fully set.
  6. Remove from oven and let cool slightly.
  7. Cut into 12 equal squares.
  8. Store in an airtight container
