Christmas Breakfast Frittata
An easy way to bring the Christmas spirit to breakfast with this Christmas Breakfast Frittata.
Ingredients
8 Eggland's Best eggs, large
1/4 cup low fat milk
1/4 cup Parmesan cheese
1/4 cup sharp cheddar cheese
5 baby spinach leaves
1/8 cup diced tomatoes
6 broccoli florets
1/4 tsp. salt
1/4 tsp. pepper
Preparation
- In a medium-sized mixing bowl, beat the eggs slightly, ensuring the egg yolks are broken up. Pour in the milk, add salt and pepper, mix ingredients using a fork. Add the sharp cheddar cheese and mix until well blended.
- Pour into a well-greased 9” round cast iron skillet or a Christmas tree shaped baking pan. Next, scatter the spinach, tomatoes and broccoli pieces throughout. Sprinkle the Parmesan cheese on top.
- Bake at 375 for about 20-25 minutes until cooked through (middle should no longer be jiggly). Allow to cool for 5 minutes. Enjoy!
