
Cobb Pasta Salad

Ingredients
1 large hard-boiled Eggland's Best egg
2 slices bacon
½ cup cherry tomatoes
½ - 1 cup cooked fusilli pasta (or your favorite shape)
2 tbsp thinly sliced red onion
¼ - ½ medium ripe avocado
1-2 tbsp premium blue cheese crumbles
1.5 tbsp homemade balsamic-dijon vinaigrette
Preparation
- Cook the pasta according to package directions until al dente. Drain well and rinse under cool water to stop the cooking. Set aside to cool completely.
- For perfect hard-boiled eggs: Place eggs in a saucepan and cover with cold water. Bring to a rolling boil, then cover and remove from heat. Let stand 10–12 minutes for fully cooked yolks (7-8 minutes for slightly jammy centers). Transfer to an ice bath and peel when cool.
- Cook bacon until crisp and golden. Allow to cool on paper towels, then chop into bite-sized pieces.
- Prepare the fresh ingredients: Halve the cherry tomatoes, slice the avocado into chunks, and thinly slice the red onion. Set aside.
- Whisk together your vinaigrette: In a small bowl or mason jar, combine balsamic vinegar, Dijon mustard, a touch of maple syrup, minced garlic, sea salt, and fresh cracked pepper. While whisking constantly, slowly stream in quality olive oil until emulsified. Alternatively, seal jar and shake vigorously.
- Time to assemble: In a large serving bowl, gently toss together the cooled pasta, halved tomatoes, chopped eggs, bacon pieces, red onion slices, avocado chunks, and blue cheese crumbles. Just like when making cookies, the key is not to overmix.
- Drizzle with your freshly made vinaigrette and toss gently to coat all ingredients evenly. Taste and adjust seasoning if needed.
