These irresistible coffee cake donuts bring together the best of two classics—soft, moist baked donuts paired with the buttery streusel topping everyone loves on coffee cake. Each donut is crowned with a golden crumb layer that bakes to perfection, adding a sweet crunch in every bite. Serve for brunch, or as a comforting treat any time of day.

Ingredients

Donut:

1 cup milk

2 Eggland's Best eggs, large

1/2 cup brown sugar

1 tsp vanilla extract

1/2 stick butter, room temperature

2 cups flour

2 tsp baking powder

1/2 tsp baking soda

pinch of salt

Crumble topping:

1/3 cup sugar

1/3 cup flour

3 tbsp butter, room temp

Preparation

  1. Preheat oven to 350 degrees and spray donut pan with nonstick baking spray. Place pan on a baking sheet.
  2. In a mixing bowl, cream together butter and sugar for approximately 3 minutes until sugar is fully incorporated and butter is creamy and a little fluffy.
  3. Add the eggs, extracts, and coconut milk. Mix until just combined.
  4. Add your dry ingredients and mix until just incorporated.
  5. Pour the batter into even portions in donut pan.
  6. In another bowl, add the sugar, flour, and butter for the crumble topping. Using a fork mix together until combined and crumbly.
  7. Sprinkle the topping evenly among the 12 donuts.
  8. Bake for 10-12 minutes or until lightly golden and the donuts are set.
  9. Allow to cool slightly before removing from the pan. Enjoy!
