Cranberry Baked Oats

These delicious cranberry baked oats are like eating cake for breakfast! They're a healthy way to enjoy a sweet holiday breakfast or brunch.
Ingredients
2 cups rolled oats
1 1/2 cups milk or plant milk
2 Eggland's Best eggs, large
2 bananas
2 teaspoons baking powder
1/4 cup honey
1/2 teaspoon kosher salt
1 cup fresh cranberries
Preparation
- Preheat oven to 375°F.
- Combine the oats, milk, egg, banana, baking powder, honey, and salt in a blender and blend for 30 seconds to 1 minute or until the oats are broken down and the ingredients are combined.
- Pour the oat mixture into four ramekins or small baking dishes and top with fresh cranberries.
- Bake for 30 to 35 minutes until the oats are golden brown.
- Remove from the oven and serve immediately. Top with additional honey if the cranberries are too tart.
