These sliders are a bold, high-protein alternative to traditional sliders—perfect for low-carb lunches, easy appetizers, or game day snacks. Made with Eggland’s Best hard-cooked peeled eggs in place of buns, these bunless sliders are layered with savory roast beef and a creamy horseradish sauce for big flavor in a small bite.

Ingredients

12 Eggland’s Best Hard Cooked Eggs

¼ cup store-bought creamy horseradish sauce or aioli, plus more to serve

4 large slices roast beef, cut into thirds

24 arugula leaves

12 small jarred roasted red peppers strips, drained and patted dry

12 parmesan cheese shavings

1 tablespoon chopped chives, to garnish

Salt, to taste

Preparation

  1. Slice hard cooked eggs in half lengthwise. TIP: For sturdier base, slice a tiny bit off bottom half of eggs to create a stable base.
  2. Spoon 1 teaspoon of sauce onto cut-side of bottom egg halves.
  3. Roll roast beef slices into spirals and place a spiral on top of sauced egg halves.
  4. Top each roast beef spiral with 2 arugula leaves.
  5. Add a red pepper strip on top of arugula.
  6. Finish with a parmesan shaving on top of red pepper.
  7. Place other egg halves on top, cut side down, to form a slider.
  8. Secure each slider with a toothpick.
  9. Place sliders on a platter, garnish with chopped chives, and serve with extra sauce for dipping!

Tips:

  1. Store: store assembled sliders in fridge, covered, for up to 2 days.
  2. Freeze: not recommended.
